Each week when I plan my meals, I usually include one day for leftovers.
In fact, did you know there is a National Leftover Day Celebration every year?
It’s celebrated every year on Black Friday – you know – the day after Thanksgiving?
OK – so maybe it isn’t a national holiday – but it IS pretty satisfying when you see something like this…
So back to weekly meal planning. I usually plan 5 or 6 meals including a day for leftovers.
This is a simple, frugal solution for both cleaning out the fridge, and saving money on our groceries.
Reinventing your leftovers is another way creative solution.
Like these leftover BBQ Chicken, baked potatoes and cheese!
Another cost saving idea is buying / cooking fresh vegetables in bulk and freezing them.
That way, I have plenty of already cooked vegetables to add to any meal
(or stretch a meal when we have surprise company!)
as well as for winter soups and stews!

We do a day for leftovers too. Saturday is leftover day in our neck of the woods. I pull everything out of the frig and we fix up plates one at a time. Each child gets to pick what they want from the tupperware containers and then Hubs and I get the leftovers of the leftovers
It is the one ‘casual’ meal of the week where we aren’t necessarily sitting down at the same time but eating as the plates come out of the microwave. It works perfectly for us and feels great to be saving a little money!

Our leftovers become hubby’s lunches for the week so he doesn’t have to buy! We do Saturday lunch with the rest.

We are a huge leftover family! I cook with the intention of having plenty of hot lunches for the week. As we clear the table each night, leftovers are placed in single-serving-sized container, this makes it easy for everyone to grab something for lunches. Favorite leftovers include: chili, soups, pasta and salads.
I also take advantage of nights that we have a rotisserie chicken (inexpensive at SAM’S club) I buy two, the first night we tear it apart and enjoy a big salad with chicken and fresh fruit. The next day I take the leftover chicken and veggies and make soup.

Our leftovers become hubby’s lunch as well, when we have some. I need to utilize the leftovers more though. Half the time they get thrown out

Leftovers are usually for lunch for me and my husband. I also cook big batches of soups and sauce and freeze them for future meals.
