Omelet wraps for “a quick breakfast for after PT”

My husband’s alarm goes off around 530am every weekday morning so he can get ready for PT.

“P.T.” which stands for Physical Training, usually last an hour, sometimes more.
Then he is home to shower, eat breakfast, and be back in time for a 9am formation.
Which leads me to our conversation the other day when he was pressed for time.

He was foraging in the cubbards for something even mildly related to a breakfast food that he could eat quickly.

“I need like a breakfast burrito or something for a these mornings when I need a quick breakfast after PT.”

This is what I pictured in my mind…

So on my next trip to the commissary, I bought two dozen eggs…

Some fresh veggies, cheese, and some lunch meat…

And I started making 2 egg omelets…

some with fresh chopped green peppers, tomatoes, and cheese…

some with sliced ham, chopped baked potatoes, and cheese…

then put the contents on a tortilla wrap…

folded it up…

wrapped them in parchment paper…

Wait JUST a minute!!! YOU FORGOT THE KETCHUP!!!

and labeled them with a permanent marker…

don’t forget to write “I love you my schmoopy oooopy booo”…

I used a clothes pin to close them rather than tape because I’m not so sure about putting tape in the microwave.

(Today, I took the pins off and just folded them shut and put them in a gallon freezer bag.)

I also popped one in the microwave this morning (after 24hrs) for 2 minutes on high.

Oh. so. good!

In case you’re curious, here are the tortillas I used.

The Chi-chi’s brand was perfect for two egg omelets and the El Paso was perfect for one egg omelets.

We had the smaller ones for lunch yesterday… even the kids liked them!

    I love this idea of making these ahead of time. And the ham, potato, & cheese one sounds delicious! I definitely think this will be something I need to do for my husband, as he will not eat anything when he’s in a hurry unless it’s convenient to grab and go. Heck, it’d even be a nice option for me on days when I’m running late to get to work!

    And they heated up well?? After being frozen? I just might have to try this for my kiddos! wonders if adding potatoes would make it not work?

    We make something similar!     Wonderful idea on freezing them! Here’s a way to make neat, easy omelets. Put 1-2 eggs in a qt size freezer bag. Mix gently. Add your ingredients, tomato, ham, cheese, etc. mix gently again. Have a large pot of boiling water about half full. Then place all the “freezer bag omelets” in the boiling water and continue to boil for 13 minutes. We usually have up to six bags at a time in pot. Carefully remove the bags after the 13 minutes. Cut the bags open, and you will have a nice neat omelet. We usually eat them right away, but I love the tortilla wrap and freezing idea! You are so smart and inspiring.

    I bake our bacon. It’s weird, but it’s so easy. We have a.. uhm… german cookie sheet (that collapses into a square or pulls out into something that would fit in a standard US oven, but not our little German one- it’s versatile) and I lay out parchment paper and on top of that, lay out the slices of bacon. I use the infrared grilling setting and let them go for about 20 minutes while I rotate laundry or put away the clean dishes from last night or wipe up spilled cereal. It’s a total time saver because I don’t have to stand next to a popping pan of hot grease and baby the bacon.

    I also agree with the omelets in a bag idea! great and easy- just write names on the bags in sharpie for whose is whose!

    My hubby PT’s 3 mornings a week so he takes his breakfast with him and the other 2 days I cook before he goes in. On PT days I make him bacon & egg toast cups. They are so simple and good! Spray a muffin pan with cooking spray and preheat your oven to 400. Cut circles out of bread to fit the bottom of your muffin cups. Wrap uncooked bacon around the cups. Sprinkle a little cheese on the bread and then crack an egg over the cheese. Cook for about 20-30 mins. I usually make 6 on Sunday night, sending 2 to work on Monday, Wednesday, and Friday with my hubby. You can read more about it over at my blog post. I did get the idea from Pinterest.

    ALL of these ideas are GREAT! I will have to try some this next week. Our routine is that when hubby hops in the shower, I start his omelette. By the time he’s out and clothed, it’s ready :) lol
