Confession #1 This amazing cake was a product of only two things.
The beautiful marriage between a box of Spice Cake mix and half a can of Pumpkin Puree.
Confession #2 Instead of using a proper Bundt Cake pan to make a proper Bundt Cake…
(Because proper King Cakes are supposed to be an oval.)
I used a Sunflower Cake pan and cut the center out.
No you didn’t…
Oh yes I did…
Confession #3 I used WAY too much baking spray + flour during the
“Please don’t let this cake stick to the pan” pre-baking preparation ritual…
Confession #4 This is my absolute favorite wooden spoon in the whole wide world.
I call him my ugly duckling spoon.
He is my go to helper when I’m making anything in my mixer -
especially Homemade Cream Cheese Icing…
2 sticks of butter
1 – 8oz stick of cream cheese
1 – 15 oz box of powdered sugar
add milk until smooth
Confession #5 I dumped half the box of powdered sugar in the mixer to start.
I was almost completely engulfed by a deadly cloud of sugary goodness.
Must remember to add it very slowly next time.
Confession #6 I used only half the batch of icing on this cake.
Confession #7 These sprinkles were a Birthday gift from my sister Sarah 2 years ago.
Oh and what ever happened to the center of the cake?
*crickets chirping*
I’m not really ready to come clean about that…

or the rest of the cream cheese icing…

I’m going to find you a Three Kings Cake recipe with whole wheat flour. (HA!)
I have a favorite wooden spoon, too. I think the other spoons in my drawer are jealous.

Oh my … now I’m hungry! On my list to bake this week is a recipe from my mom. It’s my Great-Grandma Gorish’s recipe apparently. I’m doing it just so I can blog about it – it has /nothing/ to do with being able to eat it. nothing.

We’re making a king’s cake this weekend but are looking for a small crown to go inside the dough. We don’t bake no babies in this house. I also just wanted to say that I love your positivity.

I use this same “recipe” to make pumpkin muffins, but I throw in chocolate chips and top it off with some peanut butter. Mmmm-HMM!
That cream cheese icing does look delicious though, so I plan to bookmark this page!
