Oh. My. Goodness.
This was so EASY and so GOOD!
Go get a pencil and write this one down…
I’ll wait right here until you come back… Ready?
Continental Chicken Casserole
1pkg dried beef
6-8 skinless, boneless chicken breasts
1lb turkey bacon
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 cup sour cream
1/4 cup flour
1 onion, chopped
1 cup celery chopped (optional)
**Bake at 350 for 2 hours!
First grease your pan and create a layer of dried beef.
(And if you forget to grease it like me, just stick a few tabs of butter under the edges!)
Then slice your chicken into strips… or buy the package of tenderloins like I did!
Wrap your pieces of chicken with the bacon…
Then tuck them in bed and sing them a song…
(I only had a half pound of bacon, so I wrapped then two by two.)
Chop up an onion… and sprinkle the pieces in there…
Mix the soups/flour/sour creme in a separate bowl, then dump that in too…
Cover with foil and stick it in the oven at 350 for 2 hours…
Caution : this starts to smell AMAZING after about an hour…
You will be drooling… I promise…
Even though I used partially frozen chicken tenderloins, they were cooked to perfection! The suggested side in the cookbook was to serve over noodles, but I chose green beans… more fiber, less carbs! Hubby thought it was a little too salty, so I’ll probably only use half a package of dried beef next time. The chicken was incredibly moist and easily cut for our little boys… who grubbed on this meal!
Personally… I loved it!
I thought it was perfect! But I like salty things…
Must be from being pregnant 90% of the last 5 years…

I have a very similar recipe that was my mom's except you cook it at a lower temp for ~3 hours – it is called Sunday Chicken because you can put it in the oven before you go to church and it is ready when you come home.
I also substitute red-eye (or country ham) in place of the dried beef. I live in Virginia (we love our ham). Red eye ham on biscuits and this dish are a family favorite at Christmas. Thanks for making me drool so early in the morning. (here in the US)

I love dried beef casseroles, and since we don't eat pork, seeing a recipe with turkey bacon is so refreshing. Yay! I have a jar of dried beef in my pantry right now. I may add this to the menu for the 3 weeks Gregg will be home.
