apples potatoes and squash, oh my!

Earlier this week I was drinking coffee and going over emails/tweets from the night before* and I was curious… what is this #bakingday thing everyone was talking about?!!?

(*I live in Germany (hubby is Army) and we are 6 hours ahead of Eastern Standard Time… so when I go to bed – most of ya’ll are getting ready to make/serve dinner! So there’s always LOTS to catch up on by the time I wake up!)

SOOO I did a search… and stumbled onto Life as a Mom’s post describing a planned “Baking/Freezer day” where you spend your whole day baking ahead things – in order to save time overall!  What a fabulous idea!!!

Because I have three small children, I decided to keep my goals small and do simple things that allowed me to drop at any moment to nurse the baby, kiss a booboo, and change diapers…. And I wouldn’t start anything until everyone was down for a nap – and it worked wonderfully!

For my #bakingday I accomplished 3 things.
o   Baked Squash
o   “Loaded” Mashed Potatoes
o   Prepped locally grown Apples

I can’t tell you how much FUN I had cooking and tweeting this #bakingday!  (What is this “tweeting” you speak of?!!)  Half the fun of this #bakingday was updating via twitter – Bake at 350 said it best when she wrote “Twitter is like a giant beauty shop with all of my best (cyber) girlfriends (and their friends)…”

Ok Ok, enough chit chat – here are the goods!

First the lovely Acorn and Butternut Squash…
The one and only casualty of the day while prepping squash…
(Racecar bandaid makes it all better!)
Sunbathing beauties…
(3 tabs of butter and lots of brown sugar)
Cover with foil and Bake at 350 for about 2 hours…
(or until soft/gooey/yummy in my tummy texture)
Next is a Bag of Potatoes
Adding water to the pot of Sliced Potatoes
(splish splash I was takin a bath)
Gather ingredients to make potatoes very fattening scrumptious!
 Mashed Potatoes in my mixer… I love my mixer…
(I tried to propose to her last month – but she said
she is holding out for my husband’s circular saw…)
Onwards to the pretty apples in my favorite Polish pottery bowl…
You can see you get about the same amount of scraps as you do apple pieces…
(but its soooo worth the work because these apples create the most amazing tasting pies!)
 Have you ever heard of a “Mommy’s little helper”?
I babysat a good friend of mine’s daughter two days this week after school,
and I think I should pay my friend!  It was wonderful to have an older child
for my boys to play with while I was cleaning up the kitchen!
I think they tried on every Halloween costume in the dress-up box… it was hilarious!
Batman fireman, Super frog, Wizard janitor…. and I have NO PICTURES
because I was nursing the baby on the couch during their fashion show!!
Ah well… Here they are cuddling/watching a movie while I made dinner…
I will definitely remember this idea NEXT baking day!!
And so…… Here are the results!
Total additions to the freezer:
4 qt bags of yummy apples (peeled and sliced)
4 containers of “loaded” mashed potatoes
2 containers of baked squash
I can’t wait to see pictures of what everyone has been baking this week!

    Dear Anonymous — It is mostly just an estimate!! :) or what is available in the fridge!

    I made a whole bag of potatoes… then put half in my mixer and added a stick of butter, half a container of sour creme, two handfuls of shredded chedder cheese and then dumped in some bacon pieces! :)

    oh – and repeat with the rest of the potatoes! :)

    This is a great idea. I've seen it done were several moms get together (maybe Dad's watch kids) and make a day of it. Sounds fun too. I've got a full freezer right now with stuff from the garden and my husband just got an elk this morning so will be putting in lots more meat. Glad for that!

    Manually cutting up the apples probably would have killed off my desire to cook, lol. You should look into the apple peeler corer slicer that PC has! I LOVE those mashed potatoes, looks delicious! And the squash looks soooo yummy! I'm probably going to have to make them, lol! Thanks!
